The chestnut seasonChestnut producers cultivate their chestnuts and intensify their inventiveness to create recipes using the different varieties of chestnuts: comballe, pourette, bouche rouge, etc. The Ardèche chestnut –now with AOC label– is an economic resource for the region, a product that helps "manage the space" of the Ardèche slopes and a founding element of the history and culture of the region. The Monts d'Ardèche hide many other treasures which you will discover throughout this itinerary. Thus, in the heart of the villages, the autumn Castagnades gather chestnut farmers, artisans, artists, restaurant owners and professionals of the tourist industry and, generally speaking, all the residents of the region. They meet to keep the Monts d'Ardèche alive during the autumn and welcome visitors. And, each year, the organisers come up with new activities revolving around the chestnut, its culture, its gastronomy, as well as around chestnut wood, as it is an excellent source of high-quality wood, and its uses.
